If you love the flavors of Asian cuisine, this recipe is just for you. It’s an easy-to-make dish that’s full of rich flavors and textures. Here’s how to prepare a delicious shrimp ramen that will bring the taste of your favorite restaurant straight to your home.


A rich, flavorful broth is the heart of any great ramen.

Ingredients (for 4 servings):


For the broth:

  • 1.5 liters of water

  • 1 bunch of soup vegetables (carrots, celery, parsley root, etc.)

  • 30 g shiitake mushrooms

  • 200 g shrimp (peeled and thawed)

  • 200 g tofu (firm)

  • 2 tablespoons light miso paste

  • 1 tablespoon soy sauce


For toppings:

  • 200 g ramen noodles

  • A generous handful of sprouts

  • Chopped green onions (optional)

  • Chili flakes (optional)

  • Black and white toasted sesame seeds (optional)


Method:


1. Peel and chop the soup vegetables into a few large pieces. Place them in a pot, cover with cold water, and bring to a boil. Simmer for about 30 minutes to extract the flavors.


 2. While the broth is cooking, pour warm water over the shiitake mushrooms in a separate bowl. Let them soak for 15 minutes. Once softened, drain, rinse, and remove the stems.


 3. Add the shiitake mushrooms to the simmering broth and cook for another 20 minutes.


 4. Remove the cooked vegetables and mushrooms from the broth. Slice the mushrooms into thin strips and return them to the pot. The vegetables are no longer needed.


 5. Add diced tofu and peeled, thawed shrimp to the broth. Simmer for 5 minutes until cooked through.


 6. In a small bowl, dissolve the miso paste in a ladleful of the hot broth. Pour the miso mixture back into the pot and stir well. Add soy sauce for extra flavor.


 7. Cook the ramen noodles according to the package instructions. Drain and set aside.


 8. Divide the cooked noodles into serving bowls. Ladle the hot broth over the noodles, making sure to include shrimp, tofu, and mushrooms in each bowl.


 9. Garnish each bowl with fresh sprouts, green onions, and a sprinkle of toasted sesame seeds. For extra flavor, add a pinch of chili flakes.

 10. Serve immediately. Enjoy your homemade shrimp ramen while it’s hot. mixture to an airtight jar and store it in the refrigerator to preserve the freshness of the zest.
